Pasta with Fresh Mussels and Spicy Tomato Sauce
Preparation time: 40 minutes
- 3 ½ kg fresh mussels
- 10 cloves garlic
- 1 onion
- black pepper
- 300ml white wine
- sea salt
- 700 g canned whole tomatoes
- 1kg fresh pasta
- 1tsp honey
- 4-6 tbsp olive oil
Wash тхе mussels with cold water and with a knife remove all seaweeds. Open mussels should not be used.
Divide washed mussels in two large pots. Add in each of them 3 or 4 cloves sliced garlic, some salt and pour about 150 ml of white wine.
Cover them with lids and put to a boil.
Steam for 3-4 minutes until all mussels are opened.
Put on a side without opening the pots.
Cut the tomatoes, red onion and remaining garlic into cubes.
Put a deep pan on the stove and heat well. Add the garlic and the onion and stir for a minute.
Pour some olive oil and add the tomatoes.
Reduce the heat and stir. Cook for 10 minutes.
When ready add honey, crushed thyme, pepper and salt according to your taste stir and turn off the heat.
Cook pasta according to the instructions on the backside of the package. Drained cooked pasta and sprinkle with some olive oil.
In a large shallow dish, put some pasta, pour a little bit of the sauce and arrange the mussels on top. Serve immediately with chilled white wine.
