Oatmeal Muffins with Blueberries

Vegan:

• 16 tbsp oat bran

• 7 tbs oatmeal flour

• 1 ripe banana

• ½cup blueberries

• 1 package baking powder (10 g)

• 1 tsp  baking soda

• 200ml coconut milk

 

 

Variant  with eggs and butter:

• 16 tbsp oat bran

• 7 tbsp oatmeal

• 1 ripe banana

• ½ cup blueberries

• 1 package baking powder (10 g)

• 1 tsp baking soda

• 3 eggs

• 60 g soft butter

• 3-4 tbsp milk

 

 

 

This recipe does not contain sugar or honey. I prefer to keep the flavor natural, sweetened only by the fruits.  If you prefer, later on,  you can serve them with a thin layer of fruit jam or honey.

 

 

In a large bowl, combine bran, flour, baking powder and baking soda. Pour coconut milk (or beaten eggs with butter and milk) and add smashed banana. Mix well. Sprinkle some oat flour over the blueberries. In this way, blueberries will not fall at the bottom during baking. Gently incorporate the blueberries in to the butter. Distribute the butter into the muffin molds.

 

 

Bake them in a preheated to 160 degree Celsius oven. Bake for 2 minutes

Serve warm or cold with honey, butter and jam.
