Autumn Fruit Pie
Preparation time: 30 minutes
Baking time: 40-50 minutes
- 4-5 medium apples or pears. If you have figs - combine them with pears. If you have peaches - combine them with the apples
- 2-3 tbsp cornstarch
- Brown sugar
- 250 g cold butter
- 2-3 tbsp cold milk / can be replaced with white wine or cold water /
- 1 egg
- Cardamom, nutmeg, cinnamon
- 1 cup einkorn flour +1 cup wholegrain flour or 2 cups flour of your choice.
- A pinch of salt
Cut the fruits into halves. Remove the seeds and slice into pieces. Put everything in a large bowl and sprinkle with sugar, spices and cornstarch. Leave on a side.
In another bowl, mix the flour with the salt. Cut the butter into small cubes. Put one fifth of it on a side ( 50 grams). Mix the rest with the flour until crumbs are formed. At the end add the egg yolk and the milk. Knead and form soft elastic dough. Roll out a crust with thickness of about 5 mm.
Place it on a tray, covered with baking paper and arrange the fruit on top. Leave some space from the edges.
Fold the edges and press so that they can stick.
Arrange the rest of the butter cubes. Brush the crust with the egg white and sprinkle with plenty of sugar.
Place the try in a preheated to 180-degree Celsius oven. Bake for about 40 to 50 minutes until browned.
Take out from the oven and serve warm.
