Double Chocolate Cupcakes with a Scent of Lime and Fresh Mint

 

Makes 10 cupcakes.

Preparation time 30 min

Cooking time 30-40 minutes


 

 

 

 

 

1/2 cup all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

Pinch of salt

2 table spoons cocoa powder

60 gr soft butter

¼ cup sugar

¼ cup milk

50 gr dark chocolate (60% cocoa)

1 egg

 

For the chocolate ganache:

few fresh mint leaves

finely grated lime zest

100ml heavy cream

50 gr melted dark chocolate

 

 

Preheat the oven to 160 degrees centigrade.

Sift together the flour, baking soda, baking powder, salt and cocoa powder and set aside.

Mix the butter and sugar on medium speed until airy and creamy. Add the egg, beating well. Still on medium speed, add the melted chocolate and the milk and continue mixing until well incorporated. Add the flour mixture.  Make sure that all the ingredients are well incorporated but do not overbeat. Scoop the batter into cupcake forms, filling them about 2/3 of the way full. Bake for 30–35 minutes, or until a toothpick inserted in the center of the cupcake comes out clean. Take out of the oven and set aside to cool.

Meanwhile prepare the ganache frosting.

Whip the cream until it holds its shape and spreads easily. Add the grated lime zest and finely chopped mint leaves. Mix with the melted chocolate.

Spread a little bit of the ganache over the cupcakes. Decorate with fresh mint leaves or grated lime zest.
