Makes: 24 cupcakes
½ cup sugar
1 cup pumpkin puree (made from mashed baked pumpkin)
1tsp rum extract
½ tsp vanilla extract
125 g melted butter
2 ½ cup of flour
2 tsp baking powder
1 tsp cinnamon
½ tsp ground nutmeg
½ tsp ground ginger
½ tsp ground cloves
¼ ground cardamom
For the frosting:
125 g butter
½ cup powdered sugar
Pastry decorating paints
Turn oven to 160 º C.
Beat the eggs with the melted butter and the sugar. Add the vanilla, rum essence, pumpkin puree and mix. In a separate bowl combine the flour with the baking powder and the spices.
Carefully start mixing the flour with the eggs mixture.
Divide mixture into muffin molds.
Bake about 40 minutes in preheated oven. Before taking them out of the oven, poke them with a toothpick – if the toothpick is dry they are ready.
For the frosting beat the butter and powder sugar.
Spread it evenly on the already cooled cupcakes and decorate.
