Savory Cake with Dried Cherry Tomatoes, Basil and Feta Cheese


Savory Cake with Dried Cherry Tomatoes, Basil and Feta Cheese

Serves: 12 pieces
The recipe is adapted from "Culinar" megazine

 

 

 

 

 

 

 

 

 

 

 

Turn oven to 160 degrees Centigrade. Cover a rectangular cake mold (26x12 cm) with baking paper.
Beat the eggs with the olive oil into foam. Add the milk, cheese, dried tomatoes and stir well. In a separate bowl mix the flour with basil, pepper and baking powder. If cheese is not too salty add a pinch of salt. Gradually add flour mixture to  the eggs. Stir gently with a mixer, turned to a very low speed, or with a wooden spoon.
Pour the mixture into the mold and bake about 45 -50 minutes. Check with a toothpick if ready – insert a toothpick into the thickest part, if toothpick remains dry, cake is ready and can be taken out of the oven.

 


Serve chilled with extra cheese and olive paste.
