Fresh Salted Salmon with Ouzo and Orange Juice

Check the fillet for bones and remove if any.  Cover a deep rectangular dish with plastic foil. Leave enough foil at the ends so that to be able to wrap the fish. 

Place the fillet in the dish and evenly pour half of the ouzo and orange juice. Sprinkle with half of the salt, sugar and dill. Cover with foil and turn quickly. In the same order treat the other side of the fillet.

Tightly wrap the fillet in foil and leave in the refrigerator from 24 to 36 hours, depending on the thickness of the fillet. Leave longer if it is thicker.

Before serving, take out the fish from the refrigerator and unwrap.

 

Toast some bread slices, sprinkled with olive oil and chopped oregano. Slice the fish into thin parts and serve with green salad and frozen ouzo.

Keep the leftovers in airtight container in the freezer.
