Rice Pudding with Lime and Strawberries
Preparation Time: 30 minutes
- 250 g rice for risotto
- 250 ml of water
- 500 ml milk
- 4 tbsp brown sugar
- 2 vanilla
- Zest of one lime / lemon
- 2 tbsp lime/lemon juice
- 100 g of strawberry jam
- 500 g fresh strawberries or other wildberries
Wash the rice, until water becomes clear. Place it in a saucepan on the stove with the full amount of water over lowheat. Stir from time to time.
When water is almost fully absorbed add the milk and sugar. Boil until milk is almost absorbed by the rice. Add vanilla. Do not forget to stir frequently. Remove form the stove and set aside to cool for about 10 minutes. Add lime/lemon zest and juice. Stir once again.
Distribute the pudding among small ramekins or glass bowls – put one layer of rice at the bottom then a layer of jam, then rice again. Keep in the refrigerator.
Before serving, garnish with pieces of fresh strawberries or other fresh berries.
