Roasted Pork Neck with Vegetables and Eggs.
Preparation time: 20 minutes
Baking time: 40 minutes
- 300 g pork meat (neck)
- 5-6 large red peppers
- 3-4 onions
- 4 eggs
Cut the meat into thin slices, peppers and onions into strips.
Season the meat with salt and pepper. Cook it in a deep pan with a little olive oil for 5- 10 minutes until golden brown. Transfer the meat in a baking dish.
In the same way cook the onions and the peppers. Combine them with the meat, sprinkle with some fresh or dried green herbs according to your taste and put in the oven to bake at 180 degrees Celsius.
After 3o minutes, with a fork check if the meat is cooked and if it is remove from the oven.
Break the eggs, one by one, at the top and return to the oven for another 5 to 10 minutes until eggs are ready.
Serve immediately with a glass of wine, fresh salad and warm bread.
