Cake with Pears
Preparation time: 30 minutes
Baking time: 30-40 minutes
Serves: 10 pieces
- 5-6 large pears
- 3 eggs
- 2/3 cup brown sugar + 3 tablespoons
- ½ cup milk
- 2 tbsp rum
- 2 vanilla
- 125 g melted butter
- 1 ½ cups flour
- 10 g baking powder
- 1tsp ground ginger
For the garnish
- 100 g of dark chocolate
- 100 g coconut flakes
- 100 g sour cream
Peel the pears and remove the seeds. Slice them into pieces with a thickness of about 5 mm.
Brush a circle baking pan with melted butter and sprinkle the bottom with 3 tablespoons of sugar. Arrange them in the pan, so as to cover the entire pan bottom.
Sift the flour together with baking powder and the ginger.
In a large bowl, beat the eggs with the sugar. Add the milk, rum, vanilla and butter. Gradually add the flour mixture. Beat until a homogeneous mixture is obtained.
Pour the mixture over the pears and evenly spread it.
Bake at 160 degrees Celsius for about 30 minutes, until golden-brown.
Remove the cake and let it cool for about 10 minutes. By using a knife carefully cut it around the edges. Carefully turn it upside down on a serving plate.
Meanwhile, melt the chocolate in a water bath. Coat the cake with the melted chocolate and sprinkle with coconut flakes.
P.S Chocolate was not the best option for this cake. It stays heavy for the gentle consistency of the cake. It will be better to replace chocolate layer with a layer of sour cream. Cover the cake with the cream, sprinkle with grated chocolate and coconut flakes.
