Spicy Vegetarian Wraps with Rice and Lentil
Preparation time: 1 hour
- 150 g yellow lentil
- 150 g brown rice
- 3-4 medium sized potatoes
- 1 carrot
- 10 cloves of garlic
- 1 onion
- 1 piece (3-4 cm) fresh ginger
- ground cumin ½ Art
- ½ tsp turmeric
- ½ tsp garam masala
- ½ tsp sumac
- 1/3 tsp ground ginger
- ½ tsp curry
- 1 tsp coarsely ground chilly pepper
- salt to taste
- 50 ml olive oil
- 6 pieces pita bread
- fresh arugula
- fresh carrots
- pickled chilly peppers
Separately wash and soak the rice and the lentil in hot water for about 30 minutes. Chop the onions, ginger and carrot. Halve the garlic cloves. Peel the potatoes and cut them into cubes.
In a deep frying pan, heat the olive oil and fry the garlic cloves for a few minutes. Remove them and set aside. Put all of the spices and mix well. Add the onion, carrots and ginger. Reduce the heat and cover the pan. Sauté for 3-4 minutes. Add the rice, potatoes and lentil. Pour 250 ml of water and simmer over low heat. From time to time, when liquid is almost gone, add a little bid of hot water. Cook until all ingredients become soft. The total amount of water added during cooking isfor about 400-500 ml.
Instead of cooking on the stove you can transfer the mixture into a baking pan, add 300 - 400 ml of water and bake at 160 degrees Celsius for about 30-40 minutes.
Prepare the wraps. Put a little bit of arugula on every pita bread, a few spoonfuls of the rice-lentil mixture, cut into strips carrots and pickles, a little bit of the fried garlic.
If you prefer it very hot, garnish with pickled chili peppers. Optionally, for additional moisture, you can add a spoon of yogurt. Roll and serve with extra salad or pickles.
