Preparation time: 30 minutes
- 1 medium head cauliflower
- 1 medium head broccoli
- 2 large carrots
- 1 zucchini
- 1 clove of garlic
- 1 piece fresh ginger ( 5 cm large)
- 1 tbsp vinegar - cider or balsamico
- 4 tbsp olive oil
- ½ tsp salt
- ½ tsp Dijon mustard
Cut the carrots and zucchini into strips. Chop cauliflower and broccoli into small pieces. Chop garlic and ginger. In small bowl, make the marinade - combine vinegar, olive oil, salt, mustard, garlic and ginger.
In a deep pot with a lid, stir marinade with all the vegetables, close and leave in the fridge for 2 - 3 hours.
Option 1: Vegetables can be served raw as a salad or side dish.
Option 2: Transfer the vegetables in the pan, pour in a little olive oil and bake for about 20-30 minutes in the oven.
