Pour  a little bit of vegetable oil /or olive oil / to cover the bottom of a frying pan. Put on the stove to heat. Crack the eggs into the pan, one at a time.  Fry for 2-3 minutes. Scoop some oil with a table spoon and pour it over the eggs until the yolks begin to whiten at the edges.

 


Chop the salad. Grate the carrots and ginger. Mix all in a bowl and dress with a little bit of salt, oil and vinegar.
Take two plates. Divide the salad between the plates. Take the eggs out of the pan with a slotted spoon and place them on top. Season with chili pepper.

Serve immediately.
