Preparation time: 1 hour
Serves: 12 middle sized burgers
- 150 g yellow lentils (half tea cup)
- 100 grams of rice
- 2 tbsp cooked amaranth (optional)
- 1-2 tbsp tahini could be substituted with vegetable oil
- 1tsp finely grated fresh ginger could be substitute with smashed garlic
- 4 tbsp oat bran
- ½ tsp salt
- ½ tsp turmeric
- ½ tsp curry
- olive oil
- if you wish, you can also add some sumac and a little bit of ground cumin.
Place lentil in a bowl, covering with some hot water. Allow to soak for 30 minutes. Meanwhile, wash the rice. Place it in a cooking pan with little bit of water, so to cover the rice 1cm. Put to a boil. Allow to boil for few minutes and then simmer until water evaporates. Drain the rice and put on a side.
Proceed in the same way with the lentil. Please have in mind, that yellow lentil is very tender and could be cooked very quickly. Simmer for 10 minutes over medium heat. Drain.
Combine all ingredients in a large bowl.
Cover a baking try with baking paper. Grease the paper.
Form the mixture into small balls, about the size of a ping pong ball. From time to time soak your hands in water, because the mixture could be sticky. You can use an ice cream scoop.
Arrange the balls in the try and slightly flatten. Generously brash the balls with some olive oil and bake for 20 minutes at 180 degrees Celsius.
These balls can be served on a burger roll, such as those nice carrot rolls . Stuff with some tahini, green salad, avocado, fresh ginger and pomegranate…
