Clean and wash the rice. Soak it for 30 minutes in warm water.

Put the rice to a boil over low heat with 250 ml of water - the water should cover the rice with half cm.

Cover with a lid and cook until water is almost absorbed.

Warm the coconut milk over water bath and add it to the rice. Cook for few more minutes and remove from the heat. Leave on a site to cool.

At the end add some banana slices, lime zest and chopped mint. Mix.

Transfer the pudding in serving cups and decorate with some fresh mint leaves and additional banana slices. Keep in refrigerator until serving.

You can also store it in a jar with a lid.
