Raw Fruit Candies
Preparation time: 1 hour
Serves: about 15 candies
- ½ cup raw almonds (300 ml cup)
- ½ cup raw cashew
- 2 tsp chia seeds
- 2 tbsp coconut butter
- 1 tbsp honey
- 1 ripe banana
- 2 tbsp coconut flakes
- 10 cherries
- few goji berries
- coconut flakes for rolling
Carefully cut the cherries into halves and remove the pits.
Ground the nuts in a food processor until they become rough flour. Melt the honey and the coconut butter over water bath.
Smash one banana in a large bowl and add the remaining ingredients - ground nuts, coconut flakes, chia seeds, coconut butter and honey. Mix with a spoon until they sticks together. If the mixture is still too crumbly or dry, add little bit of smashed banana.
Make the balls – put a halve cheery and one goji berry in the middle. Roll every ball into coconut flakes or chia seeds. Consume immediately or store in tightly closed container in the refrigerator.
