Cookies "Alpine Star"
Preparation time: 30 minutes
Resting and baking time: about 1 hour
Serve: 40 medium sized cookies
- 2 cup oatmeal – could be mixed with chopped dried fruits and cereal
- 1 cup oat bran
- 5 tbsp whole wheat flour
- ½ tsp baking soda
- ½ tsp baking powder
- ½ tsp sea salt
- 2 vanillas
- 1 tbsp quinoa
- 1/2 cup dried cranberries
- ¼ cup goji berries
- 5 tbsp coconut flakes
- 100 gr dark chocolate with whole roasted almonds
- 125 g butter
- 2/3 cup honey
- 30 ml rum
Cut chocolate into small cubes. Melt butter and honey over a water bath. Mix all dry ingredients in a large bowl. Add the chocolate chips and stir. Pour melted honey and butter mixture over them. At the end add the rum. Mix everything with hands or spoon until homogeneous.
Divide mixture into 3 equal parts. Spread each part on a square piece of baking paper. Wrap each piece in a tight roll, by using kitchen bamboo mat.
Put the rolls in the fridge for 40 minutes. Take out from the fridge and cut them into 1 cm slices. Cover 3 baking trays with baking paper. Arrange the slices by leaving some additional space between them.
Return in the fridge for about 20 minutes. This will prevent the cookies from melting and spreading during baking. If you don′t have enough trays, cut the rolls one after another.
Bake at 170 degrees Celsius until golden brown. Remove and let to cool for about 15 minutes before transferring them on a wire rack.
