Vegetable Stew in a Pot
Cooking time: 2 hours
Serves: 4-6 people, depends on the pot size
- few potatoes
- 2 carrots
- 2 bell peppers
- 2 eggplant
- 1 zucchini
- Little bit of green bean
- little bit of okra
- 2 ripe tomatoes
- 2 onions
- 4-5 cloves of garlic
- a few bay leaves, salt and pepper
Peel potatoes and cut them into medium sized cubes. Cut the other vegetables, except the tomatoes, into large pieces. Clean the stems of the green beans and cut them into halves.
Peel garlic cloves and onions. Slice the onion. In a large ceramic pot mix all vegetables. Sprinkle with salt, pepper and olive oil. Put few bay leaves.
Cut tomatoes into large rings and arrange on top. Put some fresh savory or oregano sprigs on top and cover the pot.
Bake at 190 degrees Celsius for about 2 hours.
