Brown Rice and Blueberry Salad

• 1 cup brown rice
• 2 large bell peppers - one red and one green
• ½ cup fresh blueberries
• 10 g green olives
• 100 grams of raw walnuts
• 2 onions
• 1 bunch of parsley
Soak the rice in warm water. Meanwhile, wash the parsley and leave it on a side to drain. Roast the walnuts in a hot pan and allow to cool on a paper towel.
Cut the peppers into small cubes and olives in thick slices. Chop the parsley. Cut the onion into thin slices and divide each slice.
Put the rice to a boil over low heat with some water - a cup and a half. Simmer until grains become soft - be careful not to overcook them. Pour it into a colander and drain unnecessary water. Leave on a side to cool.
Heat some olive oil and fry the onion until browned.
In a large bowl, combine rice, peppers, olives, parsley and blueberries. Season with some olive oil, vinegar and salt according to your taste. Stir well and leave in the refrigerator until serving. Before serving, sprinkle with roasted walnuts.
