Stuffed Eggplants with minced beef meat, walnuts and dried cranberries
Preparation time: 1 hour
Cooking time: 1 hour
- 20 dried eggplantd
- 1 kg minced beef meat
- 1 onion
- 2 cloves of garlic
- 50 g walnuts
- 1 tbsp finely chopped fresh sage
- 2 tbsp dried cranberries
- Salt to taste
- Pepper to taste
- 1tsp chili pepper
- 500 g canned tomatoes
- 50 ml cold water
- Olive oil
Soak the eggplant in hot water until soft.
Meantime, saute finely chopped onion and garlic over low heat.
Add the minced meat and mix well.
Season with salt and pepper. Stir.
Finally, add the sage, chopped walnuts and cranberries.
Stir once again and leave on side to cool.
Finely chop canned tomatoes and mix them with some water and a little bit of olive oil. Pour half of the mixture in a deep baking pan.
Drain the eggplant. Scoop a little bit of the meat stuff and fill them.Arrange, over the tomatoes in the baking pan.
Pour the remaining tomato mixture on top. Cover with baking foil and bake at 180 degrees Celsius for an hour.

Melon and Basil Smoothie
A hundred percent refreshing drink for a hot or tough day.
All you need is a piece of chilled melon, few fresh sprigs of basil, cold water and ice.
Blend everything together and serve in a tall glass with extra basil leaves.
Preparation time: 10 minutes
1 cup blackberries
2 ripe pears
200 ml of rice- coconut milk. May be replaced with water or plain milk
Cut the pears into cubes, don’t remove the seeds seeds. Put all fruits in a blender and process. Finally, add the milk and mix.
