
Vegan Truffles with Cameroon Chili Pepper


Preparation time: 1 hour
Serves: 28 truffles
- 200 g dark chocolate – 70% cacao
- 3 tbsp coconut butter
- 2 tbsp honey
- ½ tsp ground cardamom
- ½ tsp ground nutmeg
- ½ tsp ground cinnamon
- ½ tsp ground cloves
- ½ tsp extra chili smoked Cameroon pepper
- peeled hemp seeds
- bee pollen
- dried ground rose petals

Melt the chocolate, coconut butter and honey over water bath. Whisk in all the spices. Taste and adjust to desire level of spicy. Whisk well to combine.
Cover rectangular box (10x15 cm) with plastic foil.

Pour the chocolate mixture and set aside in a cold place to chill. The mixture will not become with the same hardness as the chocolate. After few hours it will become thicker and easy to cut with sharp, thin knife.

Turn upside down on wooden cutboard and cut out the chocolate cubes.

Wrap few ice cubes in a dry kitchen towel and use it to chill your palms while you are coating the truffles.
In three different plates or bowls spread separately some bee pollen, dried ground rose petals and peeled hemp seeds.

Coat chocolate cube according to your choice.

Place them on a wax paper.

and store in covered box in the fridge.
