This week I am offering you a cake with apples. Recipe is suitable for   vegetarians and easy to prepare, especially if you find someone to peel and grate the apples.

 

Vegan Apple Cake

Preparation time: 30 min
During baking time: 1 hour 

Serves: 20 medium sized pieces

 

     1 kg of apples - grated
     1 cup flour
     1 cup  semolina
     1 cup sugar
     1 tsp cinnamon
     1 tsp baking powder 
     4 tblsp oil
     4 tblsp shelled sunflower seeds
     4 tbsp raisins
     zest of one lemon
     juice of half a lemon

 

 
Preheat oven to 170 degrees, if you use ventilator ot to 180 degrees ( baking function: top and bottom).
Mixed grated apples with lemon juice, zest, seeds, half cup sugar, raisins and vegetable oil. Devide mixture into 3 equal parts.
In a bowl mix flour, remaining sugar, semolina and cinnamon.
The mixture is divided into 3 equal parts.
Take a baking tin with a diameter of 20-25 cm, put baking paper and spread some oil on it.  Distribute one part of the flour mixture. On top of it put 1/3d of the apple mixture. Repeat once again a layer with flour and another with apples  - do so until both mixtures are finished. The top layer should be of apples. Bake for about an hour in the preheated oven.
