Asian Rice


Preparation time: 15 minutes

Cooking time: 20 minutes

Serves: 4

 

 


Combine chopped vegetables (except onions and garlic) with soy sauce and tahini. Put on a a side.
Wash rice and put it to a boil in a cup and half water. Cook at very high heat the first 3 minutes, then reduce the heat and cook another 5-6 minutes on very low heat. Remove form the heat and leave to cool.
Heat 2 tablespoons olive oil in a  pan and add beaten eggs. Stir vigorously for 2-3 minutes. Transfer cooked eggs in separate bowl.
Cut the white parts of onion and garlic in large pieces. Heat remaining olive oil in a  pan  and fry for a minute or two. Add tahini and mix. Add vegetables and stir again. Put the lid. Sauté for two minutes, add boiled  rice and then fried eggs.
Stir well and serve with extra soy sauce and cucumber salad.
