
Sandwiches with Tofu and Vegetables

Sandwiches with Tofu and Vegetables
Preparation time: 30 minutes
Serves: 4-5
- 200 gr tofu
- 5 Pita Breads
- 5 roasted red peppers
- 2 roasted eggplant
- 1 cucumber
- 1 tblsp chopped fresh herbs - fresh basil, thyme or oregano
- 2 tblsp Balsamic vinegar
- 2 tblsp olive oil
- salt and pepper to taste
- arugula
Cut the peppers and the eggplant into strips. Mix with chopped fresh spices, olive oil, vinegar, salt and pepper. Leave in the refrigerator for about 20 minutes to marinade.
During this time, cut pita bread into halves, peel the cucumber and cut into bars.
Slice tofu into rectangular pieces of the same length.
Take piece of bread, put some peppers and eggplants, a piece of tofu and few arugula leaves. Fold lower, curved part of the bread and roll. Repeat with remaining products. Arrange on a plate and serve with fresh vegetables.

All you need is a piece of chilled melon, few fresh sprigs of basil, cold water and ice.
