Bread Roll with Nettle and Boiled Eggs
Preparation time Time: 2 hours
Cooking time: 40 minutes
Serves: 10 medium sized pieces

Mix the two types of flour into a bowl with the  yeast, coriander, ground cardamom, salt, and the sugar. Cut butter into small cubes and mix with the flour. Gradually, add the milk with the beaten egg and knead. If dough becomes sticky add some additional flour. Leave the dough to rise at warm place, until increases half its size.
Meanwhile prepare the filling.
Pour some boiling water over nettle. Leave for 10 minutes. During this time chop the green onions and boil 4 eggs / 7 to 8 minutes/.
Wash blighted nettle and remove the thicker stems. Cut it in bulk.
Melt butter in a skillet, add the onions and the nettles. Sauté for 2 minutes and pour the cream. Sauté for another 2 minutes. Remove from heat and leave to cool. Incorporate the raw eggs, one by one, and the  two tablespoons of flour into the chilled mixture. Stir vigorously.
Turn on the oven to 170 degrees to heat.
Take one forth of the risen dough and leave it on a side for decoration. From the other part, roll out a crust with a thickness of 1 cm. Spread nettle mixture, sprinkle with crumbled cheese and sesame seeds and arrange boiled eggs, cut in half, at the end of the crust. Fold side edges and start rolling. Transfer the roll into the baking tin.

 

 

Roll another crust from the remaining dough with same thickness and  cut out busikits in the form of a rabit and snail.

Brush the roll with an egg and arrange the figures on the top. Arrange the rest  in the same tray.

 

 

Bake approximately for 40 minutes.
