Hello SundayBakeClub fans!


I would like to introduce myself first. My name is Vili and I will be this Sunday’s host here at SundayBakeClub.com. I have known Desi for more than 15 years now and she is aware of my passion for cooking. I remember the time when we used to live together in college, she would come back from school in the evening and ask: “Hey Vili, what did you cook for me today?”
So, today I’ve prepared an easy salad for you guys. Hope you will try this recipe at home.
Place 1/3 cup golden raisins in a small bowl and cover with boiling water. Allow to sit for 5 min and then drain, grate 450 gr carrots and place them in a medium bowl, add 2 tablespoons freshly squeezed lemon juice and toss. For the dressing whisk together ¼ cup sour cream, ¼ cup mayonnaise, 1 to 3 tablespoons sugar (some people like it sweeter) and salt to taste (1/2 to 1 teaspoon). Pour the dressing over the carrots and add 1/3 cup diced fresh pineapple and the raisins. Toss together and serve.
