For garnishing

Turn oven to 180 º C and cover baking tin with baking paper.
Combine flour, oats, baking powder, salt, sage and mix well. Add olive oil and continue stirring until crumbly mixture is formed. Then add water and knead to a soft dough. If you have a mixer with kneading hooks - is easier to do it with it.

In the original recipe, the dough was kneaded in a kitchen robot.

Take the dough out of the bowl and place it on a floured surface.

Knead until receiving elastic dough.  Roll out with a pin and cut out biscuits with a cutter or s glass. Arrange in the tray.

Bake in preheated to 180 º C oven for about 15 minutes.
Take out the biscuits and let them cool.

Meanwhile cut the cheese into medium sized pieces so they can  fit on the cookie. Divide the meat pieces. Take one biscuit,  place a piece of cheese, a folded piece of meat and finish with sage leave. Secure with a toothpick.

Serve with chilled white wine.
