For the crust:
The recipe is adapted from www.marthastewart.com
• 200 g butter
• 2 ½ cup flour
• 1tsp salt
• ¼ cup cold water
Sift flour with the salt on the working desk, add diced butter and knead to form crumbs. Slowly pour, not the whole amount at one time and continue kneading until soft dough is formed. Wrap in clear plastic foil and refrigerate for 30 minutes.
For the filling:
• 1 kg plums
• 50 g butter cut into cubes
• ½ tspCinnamon
• ½ tsp ground cloves
• ½ tsp ground nutmeg
• 150 g sugar
• 3-4 tbsp brown sugar for sprinkling
• 1 tbsp corn starch
• 1 egg
Pit the plums and cut them into 4. In a large bowl, combine plums, sugar, spices and the corn starch. Stir well and leave on a side.
Remove dough from refrigerator and cut into 3 pieces.
Roll out two-thirds of the pastry on a floured surface. Use to line a pie dish, letting the pastry hang over the edges a little. Fill with the plums. Spread the butter over the plums. Roll out remaining pastry, about 2.5cm bigger than the dish, then drape over the plums. Pinch edges together well, then make a small hole in the top. Brush with egg and sprinkle with sugar. Bake for 25-30 mins until golden brown, and serve on the next day.
