Muffins with Zucchini and Fresh Goat Cheese
Preparation time: 25 minutes
Baking time: 30 minutes
- 1 cup all purpose flour
- 1 cup corn meal
- 2 tsp baking powder
- ½ tsp baking soda
- 1 tsp salt
- 1 tsp ground black pepper
- 2 eggs
- ¼ olive oil
- ½ cup yogurt
- 250 gr curds or cottage cheese
- 1 cup grated zucchini (about one medium zucchini)
- 200 gr fresh goat cheese or mozzarella
- 1 tbsp chopped fresh basil
- 2 tbsp chopped fresh parsley
Preheat oven up to 160 degrees Celsius.
In a large bowl, whisk together all dry ingredients.
In another bowl, whisk together eggs and olive oil, add the yogurt, curd or cottage cheese, grated zucchini and chopped fresh herbs. Stir with wooden or plastic spoon until fully incorporated. Pour over the dry ingredients and stir once again until combined.
If you use regular muffin molds brush them with olive oil and scoop about 1 heaping ice cream scoop of batter into each mold.
Cut goad cheese into larger cubes and insert in the center of each cake. With a spoon spread the batter to cover the filling completely.
Bake for 25 minutes until golden brown. Cool for 10 minutes, then unmold and leave on a cooling rack t rest. Serve warm with butter.
