Grandma’s sweet biscuits

Serves: about 40-50 medium sized biscuits
- 5 eggs + 1 for spreading
- Sugar 1 cup (1 cup is a 250 coffee) + ½ cup to sprinkle
- 2/3 cup yogurt
- 2/3 cup olive oil + 1-2 tbsp olive oil / can be substituted with other vegetable oil /
- 1 tsp ammonium bicarbonate
- 1 tsp baking soda
- zest of one lemon
- 2-3 tbsp chopped candied orange peels or zest of one orange
- 3 vanillas
- 1 kg of flour
Beat the eggs with the sugar until fluffy. Add lemon zest, vanilla and orange peels. Dissolve both types of soda in the yogurt. Pour the olive oil and stir. Add the yogurt and mix again.
Sift the flour in a wide pan. Make a well in the center and pour the liquid substances. Gently knead the dough. If needed, add 1-2 tablespoons of flour. Do not bother, if at this stage, the dough is very soft and you can not gather it. Instead of adding extra flour, grease your hands with olive oil and continue kneading until soft and elastic dough is formed.
Divide it into two parts. Roll out each part to a crust with thickness of about 1 cm. Cut out the biscuits with coockie cutters.
Arrange the biscuits in a pan, covered with baking paper. Leave space between them – during baking biscuits will enlarge their size at least by one third.
Turn oven to 180 degrees Celsius.
Beat one egg and brush the biscuits. Sprinkle with coarse sugar. Put to bake for about 15 minutes in the preheated oven. Take out from the oven when become golden brown.
Transfer to a rack and leave on a site to cool down. Buscuits, could be consumed immediately. If for any reason there are some leftovers, store in tightly closed container.
