Serves: 15 medium pieces
- 1 cup flour
- 1 cup custard sugar + ¼ cup
- 1 cup ground walnuts- small crunches but not finely ground
- 250 grams very soft butter
- 4 eggs
In a large bowl beat egg whites until mixture begins to form solid tops and separates from the hooks. In another bowl cream butter with the sugar. Add flour and walnuts and mix to incorporate all ingredients with dry wooden or plastic spoon. Pur this mixture over egg whites and stir from the bottom to the top.
Turn oven to 140 degrees. Take a rectangular baking dish with dimensions 20x30 cm or larger, cover with baking paper and pour the mixture. Bake about 20 minutes until brown at the edges.
Meanwhile, beat egg yolks with the remaining sugar. When cake is ready take it out and turn off the oven. Brush on top with the beaten egg yolks and return back in the oven. Check again if it is switched off! Leave for 10 minutes. Take it out and leave on a side to coll. Cut into small rectangular pieces and serve on the next day.
