Ameican Pancakes with Cherries

Serves: 20 small pancakes
- 2 eggs
- ½ cup yogurt
- 2 brown tablespoons sugar
- 30 grams melted butter
- 1 cup white flour
- 1 tsp baking powder
- ½ tsp salt
- ½ cup pitted and halved cherries
- oil or butter for frying
- jam for garnish
Beat the eggs, add the yogurt and the sugar.
Sift the flour with baking powder and salt. Add to the egg mixture little by little and mix until flour is fully incorporated and mixture is homogeneous. At the end add the butter and the cherries and stir.
On a hot pan put a small cube of butter and pour 1 tablespoon of the mixture. You can bake 2 or 3 at a time, depending on the pan size. When pancake is inflated to about 1 cm and is covered with bubbles, turned and bake to pink on the other side. Serve with honey, maple syrup or fruit jam.
