Oat bran muffins with pears, cardamom and coconut milk
Preparation time: 20 minutes
Baking time: 35 - 40 minutes
- 4-5 ripe pears/bananas/
- 4 tbsp condensed coconut milk.
- 60 g very soft butter / may be replaced with coconut butter /
- 4 eggs
- 10 g baking powder
- pinch of salt
- ½ tsp ground cardamom
- 3 full tbsp of wheat bran
- 12 full tbsp of oat bran
Peel the pears and remove the seeds. Grate or chop them in a food processor.
Separate egg whites from the yolks.
Beat the whites until hard peaks are formed. Beat egg yolks together with the butter and coconut milk until creamy. Add the pear puree and stir again.
Mix baking powder with the two types of bran, salt and ground cardamom.
Pour the dry mixture over the egg yolks and stir with a wooden spoon until you get a smooth mixture. Gradually add the egg whites. Stir again.
Distribute the mixture into muffin molds. If needed coat them with a little bit of melted butter.
Preheat the oven to 160 degrees Celsius. Bake for 35 - 40 minutes until golden brown.
These muffins are perfect for breakfast – they contain no sugar or other sweeteners.
Serve with butter, fruit jam, honey or sweet condensed milk.
