Apricot Pie

Serves 10

Cooking time 1h and a half


For the dough:
400 g  flour
125 g soft butter
pinch of salt
3 tbs sugar
50 ml cold water
1 egg

For the filling:
1 kg fresh apricots or from can
60 g butter
Powdered sugar for sprinkling

For the bread crumbs:
½ cup sugar
60 g butter
100 g flour

 

Turn oven to 190 º C. Grease with butter a pan with diameter of 30 cm and depth of 5 cm. 
Sift flour into a kneading bowl. Add salt, 3 tablespoons sugar and the butter - cut into cubes. Knead until dough gets crumbly. Add the egg and continue kneading. If the dough is still crumbly and difficult to knead pour a little water. 

 


Roll a crust with a thickness of about 5 mm. The crust should be wide enough to cover the bottom and sides of the baking tin. With a fork make holes in the crust and arrange the apricots.

 


Cut  50 grams of butter into cubes and distribute evenly over the apricots.
For the sweet bread crumbs in a separate bowl, knead 100 grams of flour, half cup of sugar and 50 grams butter. Mix everything together. Crumbs are sprinkled over the apricots the pie.

 

 

Bake half an hour in the preheated oven.

Pie is ready when it starts to become golden  in the middle and brown at the edges. Remove and allow to cool.

Leave  pie to rest for at least one day. Slice and serve sprinkled with powdered sugar.
